chore(deps): update Go dependencies

- Update all dependencies to latest versions

- Upgrade touka to break/v1 branch

- Migrate from RunShutdown to Run with graceful shutdown options

- Use functional options pattern: WithAddr and WithGracefulShutdownDefault
